Give Curry Powder a Moment

Give Curry Powder a Moment

When curry chicken is on the menu, I do not rush the first minute. Curry powder needs a little warmth in the pan before the chicken and its juices arrive. It is a small step, but it gives the whole pot a more rounded start.

Warm the Spice Gently

Heat a little oil over medium-low heat, then stir in the curry powder for a short moment until it smells fragrant. Keep it moving and do not let it darken or scorch; burnt spice can make the whole dish taste bitter. Curry blends vary, so start with the amount you know your household enjoys.

Make Room for Aromatics

Add sliced onion, garlic, and thyme, stirring until the onion begins to soften and the pan smells savory. If the spices start sticking, a small splash of water can loosen them. This is a good time to add the chicken, turning it so the pieces pick up the seasoned oil before the pot gets wetter.

Let the Sauce Come Together

Add enough liquid for the chicken to simmer, then cook gently until it is cooked through; a food thermometer should read 165°F in the thickest part. Potatoes can go in during the simmer if you like them in the sauce, but give them time to soften without letting the pot boil hard. I am no chef, just a mom who loves to cook—and for me, noticing what the spices are doing is part of the pleasure.
